Today’s post is all about yummy goodness: delicious oven-roasted cauliflower with chickpeas, sweet tangy cranberries and spicy arugula leaves all brought together with a zesty, harissa dressing! I’m so happy to be back! The holidays were great but seem far away now. Straight back into the routine and teaching 18 hours this year has sure changed my days! But now that I’m settled, I have time to try new recipes and get back to my blog! I’ve kept my eyes open this summer when visiting markets and walking around Europe, taking in inspiration from everywhere I could. Fifty shades of hummus!! Why stick to the basic taste when you can indulge in different variations that are just as delicious and mouth-watering?
Growing up in Africa, I was only exposed to the basic chickpeas and tahini hummus which was an essential of all Lebanese restaurants. Now, that I am back in Africa, I can confirm that the classic flavour is the only true flavour available. But, why stick to plain and simple when you can be a bit crazy with your hummus?? Don’t get me wrong, a good simple hummus can be all you need, but start playing around with it and add some herbs, some roasted peppers, dried tomatoes, olives, a bit of this and a bit of that and before you know you could be eating a different hummus every day of the week! The holidays are over and we’re back to running around trying to get everything done in 24 hours. I love cooking but sometimes I want to be able to do my own things and not worry about what’s for dinner and how long it’s going to take to prepare. I’ve decided to be a bit more organised (not sure how long it will last!) and do most of the cooking before I go to the gym every evening. That way when I come home, I just need to put together a quick side-salad or simply reheat what I’ve made earlier.
