Zucchini Fritters
  • 500 g zucchini
  • 3-4 spring onions chopped
  • Small handful of mint leaves chopped
  • Small handful of coriander leaves chopped
  • 2 eggs
  • 1/2 - 1 tsp cumin powder
  • 1/2- 1 tsp coriander powder
  • 1/2 tsp chilli flakes
  • Zest and juice of 1/2 lime
  • 1 cup of chickpea flour
  • 1 tsp baking powder
  • Salt and pepper
  • Olive oil to cook
Wash and grate the zucchini.
In a bowl, add the drained zucchini, the fresh herbs, the spring onions and the dry spices.
Add beaten eggs and mix well.
Finally,​ add the dry ingredients and give it a nice mix.
Heat a pan, spray some oil on it and over medium heat, drop 1-2 tablespoons of the batter onto the pan. Cook for around 2-3 minutes and turn over. Continue cooking until the fritters are cooked.
