I’m so happy to be back! The holidays were great but seem far away now. Straight back into the routine and teaching 18 hours this year has sure changed my days! But now that I’m settled, I have time to try new recipes and get back to my blog! Butternut squash a winter vegetable, say what? Nah, butternut squash for me is an everyday vegetable! I eat it all year round and never get tired of it. It marries well with everything: in soups it’s the king, in curries, in pancakes and of course in salads. My absolute favourite is oven-roasted butternut squash, drizzled with olive oil and fresh oregano leaves. I think I eat it once a week if not more. Yeah! It’s the weekend which means two days of bumming about the house and the pool, doing absolutely nothing! It’s the perfect time to catch up on some sewing and beading. Actually, I’ve been trying to make bread and more importantly I’ve been trying to make a sourdough starter which is giving me a right headache! I’ve tried so many different recipes, exchanged with experts on IG but so far I’ve haven’t managed to keep it alive for more than 4 days.
