Butternut squash a winter vegetable, say what? Nah, butternut squash for me is an everyday vegetable! I eat it all year round and never get tired of it. It marries well with everything: in soups it’s the king, in curries, in pancakes and of course in salads. My absolute favourite is oven-roasted butternut squash, drizzled with olive oil and fresh oregano leaves. I think I eat it once a week if not more.
