I’m so happy to be back! The holidays were great but seem far away now. Straight back into the routine and teaching 18 hours this year has sure changed my days! But now that I’m settled, I have time to try new recipes and get back to my blog! Coriander Hummus

Fifty shades of hummus!! Why stick to the basic taste when you can indulge in different variations that are just as delicious and mouth-watering?

Growing up in Africa, I was only exposed to the basic chickpeas and tahini hummus which was an essential of all Lebanese restaurants. Now, that I am back in Africa, I can confirm that the classic flavour is the only true flavour available.  But, why stick to plain and simple when you can be a bit crazy with your hummus?? Don’t get me wrong, a good simple hummus can be all you need, but start playing around with it and add some herbs, some roasted peppers, dried tomatoes, olives, a bit of this and a bit of that and before you know you could be eating a different hummus every day of the week! Oven-roasted Butternut & Chickpea Salad

butternut chickpea 2Butternut squash a winter vegetable, say what? Nah, butternut squash for me is an everyday vegetable! I eat it all year round and never get tired of it.  It marries well with everything: in soups it’s the king, in curries, in pancakes and of course in salads.  My absolute favourite is oven-roasted butternut squash, drizzled with olive oil and fresh oregano leaves.  I think I eat it once a week if not more.
